Da bi se postigla odgovaraju\u0107a struktura, smanjila koli\u010dina  ledenih kristala i pobolj\u0161ala \u010dvrsto\u0107a proizvoda upotrebljavaju se  stabilizatori.<\/strong><\/p>\n<p>Prije 15 godina \u2013 mlijeko, \u0161e\u0107er, salep\u2026  Nakon 15 godina \u2013 biljno ulje, mlijeko, led (25%), voda, \u0161e\u0107er,  glukozni sirup, biljne masti u prahu, sirutka, obrano mlijeko u prahu,  emulgator (monodigliceridi masnih kiselina), stabilizatori (guar guma,  karuba guma, karboksimetil celuloza), vje\u0161ta\u010dke boje (kurkumin,  hlorofil\u2026) i aroma. \u0160ta mislite o kojoj poslastici govorimo? Naravno, o  sladoledu. Po\u0161to nam je zasmetala \u010dinjenica da se u sastavu ovog  proizvoda nalazi glukozni sirup, sladoled je izazvao na\u0161u znati\u017eelju.  Me\u0111utim, za\u0161av\u0161i dublje u istra\u017eivanja, do\u0161li smo do stadija da ka\u017eemo \u2013  kamo sre\u0107e da je dana\u0161njem sladoledu jedina slabost glukozni sirup.<\/p>\n<p><strong>Obratite pa\u017enju na kod E-441<\/strong><\/p>\n<p>Mo\u017eda je savremenom \u010dovjeku pristup  zdravoj hrani te\u017ei nego ikad, jer se u proizvodima \u2013 od biskvita do  zamrznutih \u2013 koriste deseci \u017eivotinjskih i biljnih tvari. U takvim  okolnostima va\u017eno je da potro\u0161a\u010d bude svjestan svojih postupaka. Gra\u0111ani  s vjerskom osjetljivo\u0161\u0107u mogu kupiti proizvode gotovo svake marke  vjeruju\u0107i klauzi \u201cNa\u0161 proizvod ne sadr\u017ei svinjske sastojke ni tvari  dobijene od svinjskog mesa.\u201d Me\u0111utim, na tr\u017ei\u0161tu gotovo da nema  proizvoda na \u010dijoj ambala\u017ei ne stoji ova napomena. Situacija sa  sladoledom nije druga\u010dija, jer da bi se postigla odgovaraju\u0107a struktura,  smanjila koli\u010dina ledenih kristala i pobolj\u0161ala \u010dvrsto\u0107a proizvoda  upotrebljavaju se stabilizatori. Tako\u0111er se upotrebljavaju i emulgatori  da bi se postigla visoka viskoznost i sprije\u010dila fragmentacija. Samim  tim se, uz ove tvari, pojavljuje i \u017eelatin svinjskog i gove\u0111eg  porijekla. Naprimjer, prema odre\u0111enim izvje\u0161tajima, u nekim se  sladoledima uprkos oznaci \u201cnema\u201d koristi \u017eelatin ozna\u010den kodom E-441.  Neki proizvo\u0111a\u010di ozna\u010davaju ga kao \u201c\u017eelatin \u017eivotinjskog porijekla\u201d.  Me\u0111utim, oni ne daju nikakve podatke o zemljama i proizvo\u0111a\u010dima tih  \u017eelatina, te zbog toga ovi iskazi za potro\u0161a\u010de muslimane i jevreje  nemaju ve\u0107eg zna\u010daja. Cijena \u017eelatina je veoma niska. Proizvodi se u  zemljama i fabrikama s manjom vjerskom osjetljivo\u0161\u0107u i naj\u010de\u0161\u0107e od  svinjskog mesa.<\/p>\n<p>Neki potro\u0161a\u010di vide manje zlo u tome \u0161to  u sadr\u017eaju deklaracije pi\u0161e \u201c\u017eelatin gove\u0111eg porijekla\u201d. Me\u0111utim, to  \u0161to umjesto \u201c\u017eelatin svinjskog porijekla\u201d pi\u0161e \u201c\u017eelatin gove\u0111eg  porijekla\u201d ne zna\u010di da je dozvoljen proizvod, jer kako bi se govedina  smatrala halalom, stoka treba biti zaklana prema islamskim propisima.  Istra\u017eivanja u ovom pogledu veoma su va\u017ena. Otkriveno je da proizvo\u0111a\u010di  \u017eelatina sa Zapada nerado upotrebljavaju \u017eelatin gove\u0111eg porijekla, jer  je skup i tvrd. \u017delatin gove\u0111eg porijekla koji je dozvoljen proizvodi se  samo u Pakistanu. Da li \u017eelatin proizveden u toj zemlji mo\u017ee  zadovoljiti potrebe svjetskog tr\u017ei\u0161ta?<\/p>\n<p><strong>Pro\u010ditati sastav proizvoda<\/strong><\/p>\n<p>Ako konzumirate sladoled, dobro bi bilo  da pro\u010ditate sitnim slovima ispisan tekst na ambala\u017ei, jer postoje  supstance biljnog porijekla koje imaju funkciju \u017eelatina. Iako se  koriste u mnogim vrstama sladoleda, opet treba biti oprezan. Me\u0111u  emulgatorima biljnog porijekla nalazi se petkin iz kore jabuke (E-440),  agar iz morskih algi (E-406), natrijev skrobni oktenil-sukcinat (E1-400 i  E1-450), guma arabika (E-414), alginati (E-401 i E-404), karagenan  (E-407) i guar guma (E-412). Problem je kako zapamtiti ovako slo\u017eene i  nepoznate rije\u010di. Budite sigurni da to nije bezizlazna situacija. \u0160ta  trebate u\u010diniti? Na jednu cedulju zapi\u0161ite imena koja smo vam dali i  oti\u0111ite u jedan pove\u0107i supermarket. Pa\u017eljivo pro\u010ditajte dio koji govori o  sastavu proizvoda koje stalno konzumirate. Upamtite nekoliko marki i  proizvoda kao \u201cupotrebljivo\u201d i na taj na\u010din izbjegnite ista istra\u017eivanja  prilikom narednih odlazaka u kupovinu.<\/p>\n<p><strong>Mjesto sladoleda u na\u0161im \u017eivotima<\/strong><\/p>\n<p>Gotovo da nema porodice u \u010diju ku\u0107u,  posebno u ljetnom periodu, jednom ili vi\u0161e puta sedmi\u010dno ne u\u0111e  sladoled. Sladoled je na visokoj poziciji u pogledu prehrambene  vrijednosti jer se u sastavu sladoleda spravljenog od prirodnih  sastojaka, osim osnovnih sastojaka za ishranu, poput proteina,  ugljikohidrata i masti nalaze i vitamini A, D, E, C i B, zatim kalcij,  magnezij, fosfor, natrij, kalij, \u017eeljezo, te niacin i cink minerali.  Nema sumnje da i mlijeko ima velik utjecaja na visoku prehrambenu  vrijednost sladoleda. Me\u0111utim, u 95% danja\u0161njih sladoleda uop\u0107e nema  mlijeka! Umjesto njega se, kako bi dao okus mlijeka, u velikim  koli\u010dinama koristi mlijeko u prahu. Na\u017ealost, \u010dak je i kod skupljih  sladoleda ista situacija. Dijeteti\u010darka \u00d6zlem Ak\u0131n Uzunhasano\u011flu,  uposlenica bolnice Sefa, nagla\u0161ava da sladoled treba praviti ne od  mlijeka u prahu, ve\u0107 od integralnog mlijeka, \u010dak, ako je mogu\u0107e, od  kozijeg mlijeka. \u201cMlijeko u prahu sadr\u017ei \u0161tetne, kancerogene materije.  Ono nije prirodno. Vje\u0161ta\u010dkom mlijeku nema mjesta u na\u0161im \u017eivotima.  Trebamo se navi\u0107i \u010ditati etikete. Ako po svaku cijenu \u017eelite jesti  sladoled, koli\u010dina ne bi trebala biti ve\u0107a od dvije kugle sedmi\u010dno.  Majke ga mogu napraviti kod ku\u0107e, ili, pak, u jogurt pripremljen kod  ku\u0107e dodati slatko vo\u0107e, staviti smjesu u kalup i zalediti. Ne bismo  trebali davati djeci sve \u0161to \u017eele. Trebamo ih \u010duvati od \u0161tetnih  namirnica\u201d, savjetuje dijeteti\u010darka Uzunhasano\u011flu.<\/p>\n<p><strong>Ne dodajite glukozni sirup<\/strong><\/p>\n<p>Otkako je u na\u0161e \u017eivote u\u0161ao glukozni  sirup, veliki uzro\u010dnik mnogih bolesti, kao \u0161to su rak, pretilost,  hormonski poreme\u0107aji, dijabetes, demencija, hipertenzija, nepravilan rad  srca i bubrega, u velikim koli\u010dinama se nalazi u svim slatkim  proizvodima, od dje\u010dije hrane i biskvita do kola\u010da i torti. Proizvo\u0111a\u010di u  dijelu etikete sa sastavom pi\u0161u sastojke redom po koli\u010dini njihove  upotrebe. Znate li da nabrajanje sastojaka sladoleda po\u010dinje s vodom i  nastavlja se sa \u0161e\u0107erom i glukoznim sirupom? Na\u017ealost, na tr\u017ei\u0161tu ne  postoji gotov sladoled koji ne sadr\u017ei tu vrstu umjetnog sladila. Ako  uzmemo u obzir da djeca dnevno jednom ili vi\u0161e puta konzumiraju ovu  poslasticu, mo\u017eemo re\u0107i da su izlo\u017eeni prekomjernim koli\u010dinama glukoznog  sirupa. Dijeteti\u010darka Uzunhasano\u011flu ka\u017ee da glukozni sirup u potpunosti  remeti ravnote\u017eu prehrane kod ljudi, te tijelo svaki put iznova tra\u017ei  jo\u0161 sla\u0111u hranu i hranu s vi\u0161e ugljikohidrata.
