Ali kada ste suo\u010deni sa desetinama vrsta maslinovog  ulja ozna\u010denim  terminima kao \u0161to su &#8220;hladno ce\u0111eno&#8221; i &#8220;nefiltrirano&#8221;, a  pored toga postoje i  velike razlike u cijeni, postavlja se pitanje koje  odabrati. <\/strong><\/p>\n<p><strong>\u0160ta bi trebalo znati kada kupujete maslinovo ulje <\/strong><\/p>\n<p>Ekstra devi\u010dansko i devi\u010dansko maslinovo ulje pravi se drobljenjem   maslina u smijesu iz koje se ce\u0111enjem izvla\u010di ulje (ti je tzv. prvo  ce\u0111enje) bez  upotrebe toplote (to je tzv. hladno ce\u0111enje).  Ekstradevi\u010dansko ulje je visokog  kvaliteta, jer se za njega koriste  masline koje se obra\u0111uju u roku od 24 sata od  branja. \u0160to vi\u0161e vremena  pro\u0111e izme\u0111u branja i prerade, ve\u0107i je i nivo slobodnih  masnih kiselina  (ekstradevi\u010dansko maslinovo ulje mo\u017ee da ih ima do 0,8 %, a  devi\u010dansko  do 2%). Ekstradevi\u010dansko ulje ima i vi\u0161e polifenola od devi\u010danskog   ulja.<\/p>\n<p>Ulja mogu biti i &#8221;filtrirana&#8221;. Nefiltrirana ulja imaju male  \u010destice mekog dijela masline koje smanjuju vijek trajanja.<\/p>\n<p>&#8220;\u010cisto&#8221; ili obi\u010dno maslinovo ulje je slabijeg kvaliteta od   ekstradevi\u010danskog i devi\u010danskog i za ova ulja je potrebno mnogo  obra\u0111ivanja kako  bi se uklonio ukus i aroma. Iako su ova ulja i dalje  izvor mononezasi\u0107enih masti,  njihovom obradom dolazi do oduzimanja  zdravih polifenola.<\/p>\n<p>&#8220;Lajt&#8221; i &#8220;ekstra-ekstra&#8221; su \u010disto marketin\u0161ki termini koji se   koriste za visoko rafinisana ulja, a koji se odnose na blagi ukus i  boju, a ne na  smanjeni kalorijski sadr\u017eaj. <strong> <\/strong><\/p>\n<p><strong>Savijeti za kupovinu maslinovog ulja <\/strong><\/p>\n<p>Od izlaganja sun\u010devoj svetlosti, ulje postane u\u017eeglo i gubi svoja   lekovita svojstva. Po mogu\u0107stvu, treba kupiti ekstradevi\u010dansko maslinovo  ulje u  tamnim staklenim fla\u0161ama ili metalnim konzervama i \u010duvati ih na  hladnom i tamnom  mjestu.<\/p>\n<p>Datum fla\u0161iranja i isteka roka trajanja pru\u017ea smernice o tome  koliko  \u0107e dugo ulje biti dobro za kori\u0161\u0107enje. Ako ekstradevi\u010dansko maslinovo  ulje  ne koristite redovno, onda kupujete male bo\u010dice, jer se ukus i  nivo polifenola  mo\u017ee umanjiti kada je ulje dugo izlo\u017eeno vazduhu.<\/p>\n<p>Boja ulja ne ukazuju na njegovo kvalitet, ve\u0107 na raznolikost i  zrelost maslina koje su kori\u0161\u0107ene kako bi se ulje napravilo.<\/p>\n<p>Mo\u017eda ste \u010duli da ne treba kuvati sa ekstradevi\u010danskim  maslinovim  uljem jer se pri visokoj temperaturi osloba\u0111aju \u0161tetne materije i   uni\u0161tavaju korisne osobine. Ipak, sva ulja to rade prilikom zagrevanja  do ta\u010dke  kada nastane dim. Me\u0111utim, ova ta\u010dka predstavlja opseg  temperatura (za maslinovo  ulje se kre\u0107e izme\u0111u 185-215 stepeni), a ne  apsolutni broj, jer mnogi faktori uti\u010du  na hemijske osobine ulja.<\/p>\n<p>Mo\u017eete biti sigurni da je bezbedno i zdravo kuvati uz pomo\u0107  bilo kog  ulja.
