Sna\u0161ao sam se nekako, a kada sam vidio da se tu, zbog napojnica, zara\u0111uje bolje nego u kuhinji, preuzeo sam dostavu&#8230;\u201d<\/strong><\/p>\n<p>Prvi radni dan u Njujorku Ekrem Keko Marki\u0161i\u0107 po\u010deo je sa deset dolara u d\u017eepu i bez pitanja kolika \u0107e mu biti plata.\u00a0<\/p>\n<p>Petnaest godina kasnije, Plavljanin je kupio italijansku piceriju u kojoj je zaradio prvu dnevnicu u Velikoj jabuci. Marki\u0161i\u0107 je vi\u0161e od 17 godina vlasnik picerije i restorana \u201cMikes pizza\u201d, jedne od najpoznatijih u Forest hilsu, u Kvinsu.\u00a0<\/p>\n<p>Iako je radni vijek proveo rade\u0107i u restoranima, pedeset\u010detvorogodi\u0161nji Marki\u0161i\u0107 ka\u017ee da je ugostiteljstvo i dalje njegova strast.\u00a0<\/p>\n<p><strong>TRI DECENIJE U UGOSTITELJSTVU<\/strong><\/p>\n<p>Ne kriju\u0107i ponos, tvrdi da za njega nema tajni u italijanskoj kuhinji i da se u spremanju hrane \u201cne bi pomjerio nijednom Italijanu\u201d.<\/p>\n<p>&#8220;Svaki dan sam na poslu, jer ne mogu druga\u010dije da funkcioni\u0161em. Nas Balkance pokre\u0107e pritisak, mi bez njega ne mo\u017eemo da funkcioni\u0161emo\u201d, pri\u010da Marki\u0161i\u0107 dok brzim pogledima prati svaki detalj u restoranu.<\/p>\n<p>Da mu pritisak ne smeta ni nakon tri decenije u ugostiteljstvu, Marki\u0161i\u0107 potvr\u0111uje dok istovremeno prima porud\u017ebine preko telefona, sprema pice, uslu\u017euje goste \u00a0i pri\u010da sa njima.\u00a0<\/p>\n<p>\u010ca\u0161om crnog vina prekra\u0107uje zati\u0161je u restoranu i dok pri\u010da ma\u0161e rukama, ne kriju\u0107i balkanski temprament. Ka\u017ee da u vo\u0111enju restorana nema velikih tajni i da je najva\u017enije da se gosti osje\u0107aju kao kod ku\u0107e, a da je na vlasniku da im to omogu\u0107i.\u00a0<\/p>\n<p>\u201cKada su gosti kom\u0161ije iz kvarta, oni su ti kao familija. To nisu turisti koje vidi\u0161 danas i nikad vi\u0161e, ve\u0107 ljudi koje poznaje\u0161 i za koje mora\u0161 biti raspolo\u017een bez obzira na umor. Restoran je rudnik u kome funkcioni\u0161e\u0161, ili bje\u017ei\u0161 iz njega\u201d.<\/p>\n<p>Da \u0107e radni vijek provesti kao ugositelj, Marki\u0161i\u0107 nije ni slutio kada je po\u010detkom devedesetih do\u0161ao kod ujaka u Njujork, da se malo provede prije polaganja zavr\u0161nih ispita na Ma\u0161inskom fakultetu u Beogradu.\u00a0\u00a0 \u00a0 \u00a0\u00a0<\/p>\n<p>Kako je u domovini ubrzo po\u010deo rat, odlu\u010dio je da produ\u017ei boravak u Americi, a kada su u Jugoslaviji po\u010deli da se otvaraju novi frontovi &#8211; po\u010deo je da tra\u017ei posao.\u00a0<\/p>\n<p>Prvu platu zaradio je u piceriji, rade\u0107i i po 12 sati dnevno.\u00a0<\/p>\n<p>Dok se sje\u0107a kako je poslije radnog dana jedva pomjerao ruke, Marki\u0161i\u0107 pri\u010da da je za uspjeh u poslu, osim napornog rada, potrebna i snala\u017eljivost.\u00a0<\/p>\n<p>Za njega je bio presudan momenat kada se momak za razno\u0161enje pica razbolio, a vlasnik bio na rubu nervnog sloma jer nije imao zamjenu.\u00a0<\/p>\n<p>\u201cRekao sam mu da \u0107u ja probati da zavr\u0161im posao, iako prakti\u010dno nisam ni poznavao Kvins. Sna\u0161ao sam se nekako, a kada sam vidio da se tu, zbog napojnica, zara\u0111uje bolje nego u kuhinji, preuzeo sam dostavu. Nakon dvije godine, prakti\u010dno sam vodio restoran\u201d.<\/p>\n<p>Pri\u010da da je vlasnik Majk bio staromodni Sicilijanac, koji je te\u0161ko prihvatao promjene u poslu.\u00a0<\/p>\n<p>Marki\u0161\u0107eve inovacije priznavao je tek kad je vidio da donose zaradu, pa nije ni bilo iznena\u0111enje kada je Plavljaninu ponudio da kupi piceriju, iako su njegova \u00a0bra\u0107a bila zainteresovana da nastave biznis.\u00a0<\/p>\n<p>Ekrem se sje\u0107a da je gazdi donio 400.000 dolara u kartonskoj kutiji, a da je Sicilijanac \u010detiri sata prebrojavao brdo nov\u010danica u malim apoenima.\u00a0<\/p>\n<p>Od tada je picerija osam puta renovirana, a na meniju su i italijanska kuhinja i vina.\u00a0<\/p>\n<p>Marki\u0161i\u0107 ka\u017ee da od tada prakti\u010dno nije imao slobodnog dana, ali da se trudio da no\u0107nim provodima nadoknadi propu\u0161teno \u010dim stavi klju\u010d u bravu restorana.\u00a0<\/p>\n<p>\u201cMa koliko radio i zara\u0111ivao, mora\u0161 imati ventil i raditi za svoju du\u0161u. Ja sam radio za sebe i svoju familiju u rodnom Vojnom Selu, ali sam se uvijek trudio da na\u0111em vremena za opu\u0161tanje uz dobro dru\u0161tvo i lijepe \u017eene\u201d, pri\u010da Marki\u0161i\u0107 dok nadgleda sina koji mu poma\u017ee u vo\u0111enju restorana.\u00a0<\/p>\n<p>Ka\u017ee da nasljednici nemaju energiju o\u010deva, jer nisu rasli u istim uslovima.\u00a0<\/p>\n<p>\u201cOvo su ameri\u010dka djeca, odrasla u blagostanju i uz kompjutere. Nemaju na\u0161 nerv i glad za uspjehom. Sin mi poma\u017ee i \u017eeli da vodi biznis, ali ono \u0161to ja mogu za dva mjeseca, on ne bi izdr\u017eao ni dva sata\u201d.<\/p>\n<p><strong>NEMA KO NIJE USPIO U BIZNISU U ZLATNO KLINTONOVO VRIJEME<\/strong><\/p>\n<p>Iako Amerikanci uglavnom jedu u restoranima, Marki\u0161i\u010d ka\u017ee da se ekonomska kriza osje\u0107a i u ugostiteljstvu.\u00a0<\/p>\n<p>Isti\u010de da su devedesete za \u00a0sve privatnike bile &#8220;zlatne godine&#8221; i da je u vrijeme Bila Klintona bilo novca i za tro\u0161enje i za \u0161tednju. &#8220;De\u0161avalo mi se da zatvorim restoran iako je pred njim i dalje bio red mu\u0161terija.<\/p>\n<p>Puno se zara\u0111ivalo i gotovo da nema \u010dovjeka koji tada nije uspio u biznisu, jer je ekonomija cvjetala i bilo je novca. Biznis je po\u010deo da pada sa ratovima, a veliki udar osjetio se ekonomskim krahom na berzi. Posla danas ima, ali to se ne mo\u017ee porediti sa zlatnim Klintonovim godinama\u201d.<\/p>\n<p><strong>BALKANCI U\u010cE, MEKSIKANCI TJERAJU PO SVOM<\/strong><\/p>\n<p>Marki\u0161i\u0107 pri\u010da da je danas te\u017ee na\u0107i dobrog radnika, nego u vrijeme kada je on po\u010dinjao.\u00a0<\/p>\n<p>Ljudi sa Balkana sve manje rade u restoranima, a ka\u017ee da glavna radna snaga sti\u017ee sa juga &#8211; iz Meksika.\u00a0<\/p>\n<p>Iako u kuhinji uglavnom radi sa zemljacima, Ekrem priznaje da je pomo\u0107 morao tra\u017eiti i iz Meksika.\u00a0<\/p>\n<p>&#8220;Na\u0161i ljudi su vrijedni i spremni su da nau\u010de, zbog \u010dega danas rade u najboljim restoranima i stejk hausima. Neki na\u0161i ljudi su toliko znali posao da su zbog njih vlasnici otpu\u0161tali italijanske kuvare. Kada radite sa Meksikancima, to ne mo\u017eete da o\u010dekujete jer oni su tu samo da zarade, ne\u0107e da u\u010de i tjeraju po svome\u201d, tvrdi Plavljanin.<\/p>\n<p>Marki\u0161i\u0107 ka\u017ee da prije posla u piceriji nije prilazio \u0161poretu.\u00a0<\/p>\n<p>&#8220;Danas za mene nema tajni u italijanskoj kuhinji, dok znam da napravim samo dva na\u0161a jela. Ipak, kod ku\u0107e nikad ne spremam hranu.
