To rezultira jako mekim kri\u0161kama i blagim ukusom. Bijeli hljeb sadr\u017ei manju koli\u010dinu vlakana, oko jedan gram po kri\u0161ki, ali dobar je izvor proteina i ugljenih hidrata. Me\u0111utim, \u010desto dodati aditivi, koji podsti\u010du rast i bujanje tijesta, tako\u0111e podi\u017eu glikemijski indeks, tako da osje\u0107aj sitosti nakon te vrste hljeba ne djeluje jako dugo. Zato je kri\u0161ke bijelog hljeba najbolje kombinovati s namirnicama koje su bogate proteinima, poput jaja, sira i piletine. Me\u0111utim, \u010desto se integralni hljeb dobija kombinovanjem bijelog bra\u0161na s mekinjama i p\u0161eni\u010dnim klicama koje se usitnjavaju za vrijeme mljevenja. Na taj na\u010din nastane bra\u0161no s du\u017eim rokom trajanja, ali takav hljeb ne posjeduje jednaku hranljivu ravnote\u017eu. Integralni hljeb ima vi\u0161e vlakana, vitamina i minerala od bijelog hleba, i oboga\u0107en je jodom folnom kiselinom. Osim toga, integralni hljeb se znatno br\u017ee vari i ima ve\u0107i glikemijski indeks od hljeba s cijelim \u017eitaricama \u2013 dvije kri\u0161ke sadr\u017ee oko 2 grama vlakana.<\/p>\n<p><strong>Hljeb od cijelih \u017eitarica<\/strong><br \/>\nDok je integralni hljeb zapravo bijeli hljeb pomije\u0161an sa \u017eitaricama, hljeb od cijelih \u017eitarica sadr\u017ei sjemenke \u017eitarica koje se dodaju integralnom bra\u0161nu, pa se time posti\u017ee ve\u0107a nutritivna vrijednost. Hljeb od cijelog zrna, uklju\u010duju\u0107i i vrste od ra\u017eenog tijesta i one od kiselog tijesta, ima oko \u010detiri puta vi\u0161e vlakana od bijelog hljeba, \u0161to ga \u010dini jednim od najzdravijih izbora. Hljeb od cijelog zrna ima niski glikemijski indeks jer se sjemenke i \u017eitarice ne\u0161to du\u017ee vare. Svijetli ra\u017eeni hljeb, napravljen od ra\u017eenog i p\u0161eni\u010dnog bra\u0161na, po pitanju zdravog izbora nalazi se u sredini izme\u0111u bijelog i integralnog hljeba, a onaj s dodanim \u017eitaricama nalazi se na samom vrhu zdravog izbora zbog visokog udjela vlakana i vitamina. Ali, ova vrsta hljeba nije pogodna za osobe sa celijakijom.<\/p>\n<p><strong>Hljeb od kiselog tijesta i cijelih \u017eitarica<\/strong><br \/>\nKiselo tijesto di\u017ee se i do 18 sati, pa je tako ova vrsta hljeba znatno ja\u010deg ukusa i niskog glikemijskog indeksa. Vitamini, minerali i razna vlakna u ovome hljebu razlikuju se zavisno od kori\u0161\u0107enog bra\u0161na. Prema rije\u010dima nutricionista, hljeb od kiselog tijesta s cijelim \u017eitaricama definitivno je najzdraviji. Ali, treba obratiti pa\u017enju prilikom kupovine.
